Molasses cookies are one of my dad’s absolute favorite recipes. The spices in this cookie give it the perfect balance of sweetness! I was excited to see that my grandma had her own Molasses cookie recipe, but with ginger in it as well! Baking these were so easy, and they turned out chewy and delicious. Molasses cookies can be hard to get the bake just right so they are not too hard, but with this ginger molasses cookie recipe, you too can become a master!

Recipe Tips & Tricks

The key to chewy cookies is they will look slightly underbaked, but once they are out of the oven, the dough will set up! Unless you prefer your cookies more on the crisp side, in that case, leave them in the oven for a couple of minutes longer! Closer to 10 minutes.

I recently bought a Nordic Ware cookie stamp! That is how I got the cookies to have a cute “waffle” effect! They are so easy to use, and come in lots of fun designs! If you don’t have a cookie stamp, you can use a fork or your thumb!

How to make Ginger Molasses Cookies

  1. Preheat oven to 325 degrees, line 2 baking sheets with parchment paper.
  2. In a medium bowl, cream the butter, with 1 cup of sugar. Add the molasses and egg and beat well!
  3. In small bowl stir together the flour, baking soda, salt, cinnamon, cloves, and ginger. Add the flour mixture to the creamed mixture and stir to combine well!

4. Using a ¼ cup measuring scoop, shape dough into 12 balls. Roll the remaining ¼ cup sugar and place it on a baking sheet. Slightly use your thumb, or a fork to press into the cookie slightly. bake for 18-20 minutes.

I also highly recommend a cookie scoop, this will save you so much time, and make perfectly uniform cookies! This one is my favorite!

5. The cookies will look slightly underbaked, but they are done. Leave on the cookie sheet for about 5 minutes for the cookies to set up, then remove cookies and move to a wire rack to cool.

Ingredients

  • ½ cup butter
  • 1 cup sugar
  • ¼ cup molasses
  • 1 egg
  • 2 cups flour
  • 2 tsp baking soda
  • pinch of salt
  • ½ Tbs cinnamon
  • ½ tsp ground cloves
  • 1 Tbs ground ginger

Instructions 

  •  Preheat ovento 325 degrees, line 2 baking sheets with parchment paper.

  • In small bowlstir together the flour, baking soda, salt, cinnamon, cloves, and ginger. Addthe flour mixture to the creamed mixture and stir to combine well.
  •  Using ¼ cupmeasuring scoop, shape dough into 12 balls. Roll in a ¼ cup sugar andplace on baking sheet. Place one sheet at a time and bake for 18- 20 min. Coo if you are making smaller cookies, using a Tbs cookie scoop bake for 8-9 minutes. The cookies will lookslightly underbaked, but they are done. Remove cookies and move to a wire rackto cool
