Lemon Sugar Cookies with icing
Lemon Sugar Cookies are soft, sweet and a little tangy! Frost them with my brown sugar frosting and you will keep coming back for more!
Lemon Sugar Cookies make the perfect Valentine’s Day Cookies! Make them for your special someone, or turn it into a date and make them together! Either way, you will love how these cookies taste! This is my grandma’s sugar cookie recipe, but I really wanted to add lemon to them! I love lemon desserts, how they add a feeling of “freshness” and citrus! One of the best tricks I have learned on YouTube was that if you do not constantly have fresh lemons on hand, having True Lemon packs is essential! They are individual packs of crystalized lemon, and each pack = 1 wedge of lemon, so I am no longer wasting a whole lemon for a recipe, I just simply used crystalized lemon as a substitute! It works great and tastes delicious, they are also amazing to have on hand for lemon water!

This is a very soft dough, which is why refrigerating before using cookie cutters is essential! Refrigerate for at least 4 hours before rolling out.
As I said before, if you do not have lemons, buying packs of True Lemon is an easy & seamless substitute for baking with lemon. You can also add the packets of True Lemon directly into the recipe without adding water. 2 Packets of True Lemon = I TBS of Lemon juice. 6 packets= 1 squeezed lemon. 8 packets= 1/4 cup of juice.

How to make Lemon Sugar Cookies with icing
Valentine’s Day Cookies | Lemon Sugar Cookies
Ingredients
- 2 cups Butter (softened)
- 1½ cups Sugar
- 1 tsp Vanilla
- 3 Eggs
- 3½ cups Flour
- 2 tsp Cream of Tarter
- 1 tsp Baking Soda
- ½ tsp Salt
- 6 packets True Lemon (or juice of 1 lemon)
Instructions
- With an electric mixer, cream together the butter and sugar until it is light and fluffy. (about 2-3 minutes) Mix in the lemon juice (or True lemon packs)
- Beat in the vanilla and the eggs.
- In a separate bowl, sift together the flour, cream of tartar, baking soda, and salt.
- Gradually add the flour mixture into the butter mixture.
- Chill the dough for 4 hours or overnight
- Roll out the dough on a floured surface and use cookie cutters. Transfer the cookies onto an ungreased cookie sheet.
- Bake at 350° for 6-8 minutes, until they are pale golden brown.
- Let the cookies cool before frosting!
