This recipe is adapted from one of my grandma’s recipes. This pumpkin cookie recipe makes the perfect fall treat. They are soft, chewy, almost like a pumpkin cake! The flavors are delicious, and would make the perfect pumpkin dessert at a family dinner!
How to make Pumpkin Cookies
- First thing is to cream the butter, sugar, and brown sugar together until it is light and creamy! Then add the eggs and vanilla.
- Then add the pumpkin puree, and mix just until combined. It helps to scrape the bowl to make sure the pumpkin is fully mixed.
3. Add the flour, baking soda, and baking powder, and spices, then mix well! Once it is mixed, cover and chill for 30-45 min.
4. Once it has been chilled, scoop out the dough and place on a baking sheet. I love using my cookie scoop, it literally saves me so much time, and also makes the cookies nice and uniform!
5. Bake at 350 degrees, for 10-12 minutes.
6. Make the glaze, mix up the powdered sugar, milk and vanilla.
7. Once the cookies come out of the oven, let them cool for about 10 minutes, then drizzle the glaze over the top.

- 2 ¾ cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 Tbs cinnamon
- ½ tsp ginger
- ½ tsp nutmeg
- ½ tsp salt
- ½ cup butter (softened)
- 1 cup brown sugar (packed)
- ½ cup sugar
- 1 egg
- 1 cup pumpkin puree
- 1 tsp vanilla
Icing
- 2 cups powdered sugar
- 3 Tbs milk
- 1 tsp vanilla
Instructions
