During the summer when my brother and I were not in school, we used to go with my mom to my great-grandma’s house every week for lunch. Without fail, my great-grandma always had cookies, specifically spritz cookies. She would pipe them in little squiggles, looking like an “S” so my brother, being young would call them “s cookies” While being like butter cookies, the difference is that spritz cookies are made with an egg! I am so thrilled to be able to make my great grandma’s spritz cookie recipe, I know my brother will be very happy, and I think you will be too!

History of Spritz Cookies
I don’t normally get into the history of my recipes, but this being my great grandma’s recipe I thought it would be cool to look into the history of where this recipe came from! Spritz cookies are a traditional Scandinavian Christmas Cookie. The traditional way to make them are, as my great-grandma would, “s” shapes or “o” shapes.
Spritzgebäck
The German verb spritzen means to squirt in English. As the name implies, these cookies are made by extruding, or “squirting”, the dough with a press fitted with patterned holes (like a cookie press) or with a cake decorator, or pastry bag, to which a variety of nozzles may be fitted. In the United States, the name Spritzgebäck is often shortened to spritz becoming known as the spritz cookie.

Recipe Tips & Tricks
If you are using a cookie press, hold the press flush to the cookie sheet then press the handle. The cookie sheet needs to be ungreased so the dough will stick! If you are using a just. cookie scoop, flatten the cookies a bit with a cookie press or a fork! I used a cookie press and they turned out wonderful!
I have learned to add food coloring before adding the flour to ensure not to over mix and form gluten. Doing it this way I found to use a bit more because when you add the flour it will lighten up!

How to make Spritz Cookies
Spritz Cookies
Ingredients
- 1 cup Butter (Softened)
- ¾ cup Sugar
- 1 Egg (beaten)
- 1 Tbs Almond Extract
- 2 ½ cups Flour
- ½ tsp Baking Powder
- ½ tsp Salt
Instructions
- In a stand mixer or bowl, cream together the butter and the sugar
- Then add in the egg and almond extractand mix until smooth
- Sift in the flour, baking powder, salt
- Using either a cookie press, piping bag, or cookie scoop, scoop dough onto an ungreased cookie sheet, decorating with sprinkles if desired.
- Bake at 375° for 12-14 minutes
