When you are mixing the flour, sugar, and butter, make sure the butter is cooled or at room temperature. It needs to be in solid form so that it can be incorporated so that the butter is crumbly in the flour mixture. Also referred to as “cutting” in the butter!
The recipe says in a separate bowl whisk the egg and vanilla until it is frothy!! When you incorporate the egg mixture back into the flour mixture, only mix until it is incorporated. If you over-mix the batter, the cake will become too tough. We want a light and airy cake!
Don’t be afraid to make more topping 😉 no one has ever complained about too much topping on coffee cake.

How to make Grandma’s Coffee Cake
Grandma’s Coffee Cake
Ingredients
- 2 ⅔ cups Flour
- 1 ½ cups Sugar
- 2 tsp Baking Powder
- ½ tsp Salt
- ½ cup Butter
- 2 Eggs (beaten)
- 1 ½ cups Milk
- 2 tsp Vanilla
Topping
- ⅔ cups Brown Sugar
- 1 Tbs Cinnamon
Instructions
- In a bowl add the flour, sugar, baking powder, and salt. Cut in the butter until the mixture is crumbly. Make a well in the center.
- In a separate bowl, beat the egg and vanilla until the egg is frothy. About 1-2 minutes. Then add the milk into the egg mixture.
- Pour the egg mixture into the well of the flour mixture. Stir the batter just enough to bring it all together. Do not overmix.
- Pour into a greased or parchment lined 9×13 pan.
- Prepare the topping in a bowl, mixing brown sugar and cinnamon together. Sprinkle over the top!
- Bake at 350° for 45-50 minutes.
