Ingredients

  • 1 cup water warm- for the yeast
  • 2 ¼ Tbs active dry yeast or 1 pkg
  • 1 cup buttermilk
  • 3 Tbs honey
  • ¼ cup butter
  • ½ tsp baking soda
  • 2 tsp salt
  • 5 cups flour may need to add more, depending on dough

Instructions

  • First, sprinkle the yeast over the water, making sure the water is warm but hot enough to kill the yeast. Generally 110-115°
  • Warm the buttermilk, honey, and butter in the microwave or in a sauce pan, until the butter melts.
  • In a separate bowl, prepare the dry ingredients, the flour, baking soda, and salt.
  • In a stand mixer, add half of the flour mixture, and all of the buttermilk mixer, and yeast mixture. Mix with the paddle attachment until well blended.
  • Add the rest of the flour, a little at a time, until the dough holds together. Then change to the bread hook attachment and knead the dough for at least 5 minutes, but no longer than 10 minutes. Add enough flour so the dough doesn't stick to the bowl.
  • Let the dough rise until doubled (30-45 minutes) then shape into loaves, and place into two grased loaf pans, and let them rise again until doubled.
  • Bake at 350 degrees for 35-45 minutes, or until the bottom of the loaves sound hollow when you tap it
