First, sprinkle the yeast over the water, making sure the water is warm but hot enough to kill the yeast. Generally 110-115°
Warm the buttermilk, honey, and butter in the microwave or in a sauce pan, until the butter melts.
In a separate bowl, prepare the dry ingredients, the flour, baking soda, and salt.
In a stand mixer, add half of the flour mixture, and all of the buttermilk mixer, and yeast mixture. Mix with the paddle attachment until well blended.
Add the rest of the flour, a little at a time, until the dough holds together. Then change to the bread hook attachment and knead the dough for at least 5 minutes, but no longer than 10 minutes. Add enough flour so the dough doesn't stick to the bowl.
Let the dough rise until doubled (30-45 minutes) then shape into loaves, and place into two grased loaf pans, and let them rise again until doubled.
Bake at 350 degrees for 35-45 minutes, or until the bottom of the loaves sound hollow when you tap it
