Pumpkin Cookies

Ingredients

Cookie

  • 2 ¾ cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 Tbs cinnamon
  • ½ tsp ginger
  • ½ tsp nutmeg
  • ½ tsp salt
  • ½ cup butter softened
  • 1 cup brown sugar packed
  • ½ cup sugar
  • 1 egg
  • 1 cup pumpkin puree
  • 1 tsp vanilla

Icing

  • 2 cups powdered sugar
  • 3 Tbs milk
  • 1 tsp vanilla

Instructions

  • First thing is to cream the butter, sugar, and brown sugar together until it is light and creamy! Then add the eggs and vanilla.
  • Then add the pumpkin puree, and mix just until combined. It helps to scrape the bowl to make sure the pumpkin is fully mixed.
  • Add the flour, baking soda, and baking powder, and spices, then mix well!Once it is mixed, cover and chill for 30-45 min.
  • Once it has been chilled, scoop out the dough and place on a baking sheet
  • Bake at 350 degrees, for 10-12 minutes
  • Make the glaze, mix up the powdered sugar, milk and vanilla.
  • Once the cookies come out of the oven, let them coolfor about 10 minutes, then drizzle the glaze over the top.
