Strawberry Rhubarb Pie

This is my grandma's recipe for easy strawberry rhubarb pie! It is the quintessential spring dessert, and wont last long in your kitchen!

Ingredients

  • 3 cups Rhubarb (chopped into 1/2 in slices)
  • 1 cup Strawberries (chopped)
  • 1 cup Sugar
  • 2 Tbs Butter
  • 3 Eggs (Separated yolks and whites)
  • 1 tsp Cornstarch
  • ½ cup Sugar (for the meringue )

Instructions 

  • Prepare a 9-inch pie pan with a pie crust. and preheat the oven to 350 degrees.In a separate bowl add the egg whites and 1/4 cup of sugar.
  • Using a hand mixer on high, beat the egg whites until they turn into stiff peaks.
  • In a sauce pan add the cut up strawberries, rhubarb, sugar, butter, egg yolks, and cornstarch. Mix until it is all incorporated, and keep mixing until it starts to get bubbly and thickens.
  • Take off the burner and add half the meringue into the pie filling by folding it in. Once it is mixed, pour into the pie pan.
  • It is optional to add the rest of the meringue to the top of the pie. Or you can discard.
  • Bake for 35-40 minutes, or until the meringue is golden brown.
