6tbs sugar
4 ½tspactive dry yeast
3eggs(beaten lightly)
½cupmilk
2tspcinnamon
2tspcardamon
5-6cupsflour
Filling
1stickbutter(softened)
¼cupsugar
2tspcinnamon
2tspcardamon
Egg Wash
1egg
1tbsmilk
sugar for sprinkling on top
Instructions
In a your stand mixer, add the warm water (110 degrees max) melted butter, and yeast. Let that sit for about 5 minutes, until the yeast gets bubbly!
Then add the eggs, milk and salt and stir with a spoon so everything is mixed. Add the 5 cups of flour, 1 cup at a time, mixing between. Knead in a mixer for 5 minutes, or by hand for about 10-12, until the dough is elastic.
Shape into a ball and let rise for an hour
Take the dough onto a floured surface, and roll it into a rectangle that is about 15 inches by 20 inches.
Spread butter, then dust with sugar, cinnamon, cardamon mixture and use your rolling pin over the sugar so it is pressed into the dough.
Fold the short end 1/3 of the way over, then fold the other end on top of that one.
Roll until this rectangle is 10x12 inches. and make the strips a little less than an inch thick.
Place the rolls on a baking sheet, and let them rise again until they have doubled in size, usually about another hour.
Make the egg and milk wash and brush over the buns.
Bake at 350 for 20-25 minutes, until they are golden on the outside.
Notes
A great place to rise bread is in your car! It doesn't even have to be a warm day. It was 65 degrees at my house the other day and these buns loved the inside of my car!
