Grandma’s Strawberry Rhubarb Pie Recipe
Rhubarb season is among us! I spotted it in the grocery store today and was thrilled! I have never baked with rhubarb in my life, but have had some delicious strawberry rhubarb pies in my life. I picked some up from the store banking that I could find a recipe for rhubarb somewhere in my grandma’s collection.
I was in luck! I found my grandma’s “easy strawberry Rhubarb Pie recipe and it is the quintessential spring dessert, and won’t last long in your kitchen! Simple to whip up, and absolutely delicious.
How to prepare Rhubarb
Now if you’re like me, and have never baked with rhubarb before, I was wondering how I even prepare it to bake. Luckily I found it was very simple to prepare for baking if purchased from the grocery store. It is so simple: it can be prepped the same way as celery. Give the stalks a nice wash, cut off both ends and slice. You’ll want 1/2-inch slices for this pie.

- Sugar
- Butter
- Salt
- Cornstarch – essential to thicken the filling
- Eggs -Separated eggs and whites

This recipe is already very quick and easy to assemble, and then bake, but if you want to make the process even quicker, use a store-bought crust! They are just as delicious, but will take even more time off the total recipe if you are in a crunch!
If you choose to make your own crust, check out my Easy Pastry Crust recipe! It is very simple to make, and foolproof! Make sure you add enough water so that the crust holds together!
You will be making a meringue for this recipe, it is just whipped egg whites and sugar, and very simple! The meringue is folded into the cooked strawberry rhubarb filling, and it is optional to top the pie in the remaing meringue, or with a crumble topping!
You will need an nine inch pie pan, my favorites are these from pyrex!

Preparing the meringue
- Prepare a 9-inch pie pan with a pie crust. and preheat the oven to 350 degrees.
- In a seperate bowl add the egg whites and 1/4 cup of sugar. Using a hand mixer on high, beat the egg whites until they turn into stiff peaks.
Making the strawberry rhubarb pie filling
- In a sacuce pan add the cut up strawberries, rhubarb, sugar, butter, egg yolks, and cornstarch. Mix until it is all incorperated, and keep mixing until it starts to get bubbly and thickens.
- Take off the burner and add half the meringue to the pie filling by folding it in. Once it is mixed, pour into the pie pan.
- It is optional to add the rest of the meringue to the top of the pie. Or you can discard.
- Bake for 35-40 minutes, or until the meringue is golden brown.

- 1 cup Strawberries (chopped)
- 1 cup Sugar
- 2 Tbs Butter
- 3 Eggs (Separated yolks and whites)
- 1 tsp Cornstarch
- ½ cup Sugar (for the meringue )
