With winter in full swing, I have been willing to make more soups! (I just can’t bring myself to make soup during the summer months) And I stumbled across this roll recipe in my Grandma’s collection. Rustic Sourdough Dinner Rolls go perfectly with a nice hot soup!
This recipe was one of her dinner recipes, I adapted it a little bit because I have been really into sourdough lately! Sourdough adds so much flavor and really brings these dinner rolls up a level! You can eat them with jam, or spread some garlic butter on them and enjoy!

You will need an active, bubbly, sourdough starter. If you do not already have a sourdough starter, King Arthur Flour has a very comprehensive guild to make your own! (which is how I made mine) Or you can buy one, I recommend this one from Amazon. You can also see my post about Maintaining a Sourdough Starter!
A stand mixer is useful for kneading the dough and activating gluten! But if you don’t have one, hand kneading will be just fine!
A warm spot for the dough to rise is essential, on days where the sun is out warming the inside of a car, you can put your dough into the car for a lovely & warm spot for the dough to rise! But make sure it’s not too hot! I often will use this trick in the spring, in other months, I’ll have my dough under the light on the microwave!
A thermometer is also extremely useful to ensure the proper temperate of the water in order to activate the yeast! Too hot, and it will kill the yeast, but too cold and it won’t activate properly!

How to make Rustic Sourdough Dinner Rolls
First, Make sure that your starter is active and bubbly This is how mine looked bubbly, but starters can look very different!
Combine the flour, water and sourdough starter in a bowl. Mix well. It will be sticky. Nice and sticky, but can be made into a ball.
Let the dough rise for 20-30 minutes.
After the dough has rested, put it into a stand mixer. If you don’t have a stand mixer, it can stay in the bowl! Add the yeast and 1 tbs of water into a separate bowl and let it activate for about 3-5 minutes. Then put the activated yeast, and the salt in the stand mixer with the dough and mix for 5 minutes on low, or knead the ingredients together for about 10 minutes. The dough should be sticky but still in a ball.
After it has been mixed, let it rise for 1 hour- 1 1/2 hours. Cut the dough into 8-12 pieces, depending on how big you like your rolls, and place on a baking sheet. Score the top if you would like and cover those and let it rise one more time for another 30 minutes.
Bake at 450 for 15-17 minutes, and enjoy these rustic sourdough dinner rolls with jam, or anything else you like to pair with them!
Rustic Sourdough Dinner Rolls
Ingredients
- 1 cup Sourdough starter
- 3 cups flour
- ¾ cup water
- 1 ½ tsp salt
Yeast mixture
- 2 tsp yeast
- 2 tbs warm water
- 1/2 tsp sugar
Egg wash
- 1 egg yolk (for egg wash)
- 1 tbs water
Instructions
- Combine the flour, water and sourdough starter in stand mixer. Mix well. It will be sticky, sticky is okay, but it should be able to form a ball.
- After the dough has rested, for 30 minutes, add the ingredients for the yeast mixture in a separate bowl and let it activate for about 3-5 minutes. (Acitivated yeast will look bubbly) Then put the activated yeast, and the salt in the stand mixer with the dough and mix for 5 minutes on low, or knead the ingredients together for about 10 minutes. The dough should be sticky but still in a ball. You may need to add 1/2 cup more flour if your dough is really sticky!
- After it had been mixed, it should have more of a smooth texture. Now, let it rise for 1 hour- 1 1/2 hours.
- After it has risen, cut the dough into 8-12 pieces, depending on how big you like your rolls, and place on a baking sheet.Score the top if you would like and cover those and let it rise one more time for another 30 minutes.
- Right before they go in the oven, brush over the rolls with the egg yolk
- Bake at 450 for 15-17 minutes
