My sister-in-law and I have been best friends ever since we first met, so I was more than excited to be able to make her birthday cake this year! She pretty much gave me full reign, saying she liked berries, light flavors, and my cream cheese frosting! I knew I wanted to use one of my grandma’s cake recipes, and I had leftover marionberries from the pie I made for my grandpa. I decided on a simple white cake recipe that I found. This recipe is super simple to follow and will leave a light and fluffy cake! I love the added berry filling, which compliments the frosting deliciously! This simple recipe makes the perfect summer birthday cake!

In order to get a light, fluffy, white cake, make sure you beat your egg whites! Beat them until they can form a peak! I prefer doing this in a bowl with my hand mixer with a whisk attachment instead of a KitchenAid mixer. I like the control the hand mixer gives me, and I can be in control of where the mixer is going, move it around instead of the whisk staying in one spot.
When you mix the egg white, in order to not pop the bubbles that make the cake fluffy, you want to be gentle and “fold” the egg whites in. Think of it like scooping down to the bottom of the bowl, and lifting the batter on top of itself.
Bake ahead of time! I had a very busy week leading up to my sister-in-law’s birthday, luckily this cake holds very well in the freezer! To save time & stress leading up to an event, bake the cake, create your layers, allow it to cool fully then wrap well (double layer foil & plastic bag with the air sucked out) and this cake will hold beautifully in the freezer! Simply take it out of the freezer and place it into the fridge the night before you plan on frosting it!
How to make a Simple White Cake
Simple White Cake
Ingredients
- ⅔ cup Butter or shortening (room temperature)
- 3 Egg whites
- 1 ¼ cup Sugar
- 1 cup Milk
- 2 ⅓ cups Flour
- 1 tsp Vanilla extract
- ½ tsp Salt
- 3 tsp Baking powder
Instructions
- White the egg whites until they are light and fluffy, forming soft peaks, then set aside.
- Cream the butter and sugar, then add the flour, vanilla, baking powder, and salt and mix untillcombined.
- Fold in the egg whites, until they are fully incoorperated.
- Pour into two round cake pans, or one 9×13 pan. Bake at 350 for 25-30 minutues or until a knife comes out clean.
- Allow the cake to cool fully before frosting
